Ground turkey instead of beef or lamb, canned tomatoes instead of fresh, garlic-ginger paste instead of fresh. I only used half a box of tomatoes and added tomato paste.

  1. Heat oil in a pan. Add chopped onions and fry till nice golden brown.
  2. Add the mincemeat along with ginger & garlic paste. Cook on medium – high heat for a few minutes till color changes.
  3. Add the dry spices (coriander powder, salt, turmeric,red chili powder & red chilli flakes) Keep stirring for 4-5 minutes to let the spices cook.
  4. Add the potatoes and fry 4-5 minutes then add 1/2 cup of boiled water. - Turn the heat slow and add 2-3 green chillies, chopped spring onion & some coriander.
  5. Sprinkle cinnamon powder cover and let cook till potatoes are tender. - Take off heat. Garnish with fresh coriander leaves and serve hot with roti, naan or boiled rice.

Maybe by par boiling the potatoes the cooking time could be reduced. Add beef and potatoes and cook and stir to break up the mince and coat it all in the curry paste. Add chilli, tomatoes, stock and tomato purée, bring to a simmer, season with salt and Once the potatoes are tender remove from the heat and serve garnished with coriander with naan bread and boiled rice.
