In bhinda ni kadhi more besan is used which make it little thicker in consistency. Gujarati Bhinda ki Kadhi/ Bhindi ki kadhi - Mildly spiced okra and buttermilk stew - specialty of Gujarat. Goes well with steamed rice and roti's. This Bhinda Ni Kadhi is a slightly thicker version of the famous Plain Gujarati Kadhi and usually served with rice and bhakri.

  1. Take a bowl add curd and besan mix it very well. Add salt,Ginger garlic paste turmeric powder salt and 2 glass water.
  2. Heat oil in a kadhai add mustard seeds fenugreek onion seeds cumin and hing soute it.
  3. Now add onion, green chilli,curry leaves and dry red chilli mix it well till onions become brown.Add curd-besan mixture in it. Stir it continuesly.give boil.cover it with lid cook for 5 minutes.this is a digestive kadhi without pakora.
  4. Bhindi ——-heat oil in a pan. Add cumin seeds,garlic, onion,green chillis and dry red chilli soute it till onions become translucent.
  5. Add bhindi,mix gently.cook on low medium flame till bhindi (okra)becomes soft Do not cover with lid.Add amchur powder,salt,turmeric powder,Dhania powder.mix it well.
  6. Turnoff the flame add lemon juice and coriander leaves.Serve with chapatis.

I prefer to use slightly sour. Bhindi kadhi is basically roasted ladies finger boiled in a tempered flavored yoghurt gravy. Unlike other kadhis its little thick. thanks to ladies finger. If Heat oil in a pan. Once hot add okra, sprinkle some salt and saute in between till its cooked.
