Pepper steak is quick, easy and perfect to whip up any night of the week. Strips of beef and bell peppers are stir fried in a wok to create a delicious main dish, ready in no time! I love it with brown rice, but cauliflower rice would also be great on the side. Heat oil in large skillet on medium-high heat.

Instructions to make Spicy Pepper Steak:
  1. Slice peppers and onions in equal size pieces (thin 2 inch strips or so).
  2. Slice beef in same size pieces as veggies.
  3. Add all remaining ingredients to the beef (EXCEPT Beef broth and cornstarch).
  4. Let beef marinate for 30 minutes or more.
  5. Heat a large skillet or wok over medium high heat. Add beef and cook for about 5 minutes.
  6. Add peppers, onions, and broth.
  7. Reduce heat to medium low (or a low boil). Cook for about 30-40 minutes uncovered. Check broth and adjust seasoning to your liking.
  8. Add the cornstarch slurry, stir and cook until thickened (5 minutes)
  9. Serve over cooked rice.

Stir in gravy mixture, onion and bell pepper. When it is very hot, throw in the onions and cook for less than a minute. Return peppers, onions and garlic to skillet and stir to combine. Add the beef back to the pan along with the sauce. In a small bowl, whisk coconut milk, sugar, chili sauce, lime zest, lime juice and remaining salt until blended.
