Beat eggs with wisk until well mixed and pour into medium sized greased skillet over medium heat. Cook until the bottom and around the edges is solid. Then add steak, tomato, green onion, mushroom, and cheese. Continue to cook until cheese melts then, using a spatula, flip one side over the other and allow leftover egg to run out and cook.

Remove skillet from heat, fold one end of omelette, with the spatula over the middle, then fold over the other side right on to serving plate. Once the omelet is set and custardy looking add the steak, onions, and shredded cheese to the center of the omelet and then immediately start tilting the pan to roll the omelet. Once eggs are completely cooked and not runny, and any cheese begins to melt.
