A friend of mine gave me a random bag of fish that had been frozen for who knows how long. I needed a recipe that would cover any unwanted flavors and still be safe and good. This is a meld of an old chowder recipe and a fish stew I found in a midevil cookbook.

The ingredients needed to make 3 Fish Stew:
  1. Get 4 Fish fillets, any fish works. I've used salmon, cod, trout,bluegill, tilapia, but anything will work.
  2. Prepare 5 Strips of bacon
  3. Get 1 Onion
  4. Take 2 medium sized potatoes
  5. Get 2 cup Water
  6. Make ready 1 cup Heavy cream
  7. Take 2 tsp Salt
  8. Make ready 1 tsp White pepper
  9. Make ready 1 can Evaporated milk

Rinse the fish bones and drain. Peel the onion and chop coarsely. Heat oil in a saucepan and saute onion. Easy cod fish stew with vegetables in the tradition of Northern Germany.

Instructions to make 3 Fish Stew:
  1. Cube the fish into about 1"
  2. Pour the water into a saucepan and add about 1/3 of the fish cubes. Boil for about 10 minuts
  3. Brown the bacon, and onion,when crispy cube and add the potato. Brown well
  4. Add the fish in the water to the bacon/onion/potato bring to a simmer and add the rest of the fish. Simmer for about 10 minuts
  5. After 10 minutes add the cream, evaporated milk, salt, pepper, and shrimp. Bring to just below a boil and com for 1 hour. Note: it is important not to let this boil your sauce will break and while it will still be tasty, visually it will get really ugly.
  6. Enjoy

Big flavors, short cooking time, optional creamy or clear, tomato infused broth. Taste and add salt and cayenne pepper to taste. Sheepshead make a great stew fish, but many other fish would work here, too. Bass fillets, snapper, grouper, black seabass, Pacific rockfish, perch, lingcod, chunks of pike, and, above them all, tautog, which is the finest stew fish in North America. But as this is a Southern stew, tautog, a Northeastern fish, would be out of place.
