Cover and refrigerate until serving time. In a jar, combine oil, vinegar, garlic, salt, mustard, basil and pepper. Split-pea spinach dal with cauliflower is more of a stew than a soup; for a thinner version, decrease the final simmering time. I only had green split peas as others are hard to find.

  1. Chop everything up and place the onions, garlic, ginger and spices into the pot first
  2. Then add chopped cauliflower and sweet potato
  3. Then the coconut milk and some extra water. As well as the lentils.
  4. Pour the other ingredients in after the other veg is softened and let the pot sit for around 20 mins simmering. Or until the lentils are cooked.
  5. Serve with coriander, yoghurt and lime pickle.
  6. We also made some chipatis (Paul Hollywood’s recipe is very easy!)

Based on other reviews I doubled the cauliflower and reduced the cumin. I noticed the spices on a whole are. The cauliflower turns a lovely yellow color. Be generous with the spices and use lots of garlic! Don't use frozen spinach for this one.
