- Wash rice in cold water and leave to soak in clean cold water for 20 mins. Then drain in fine sieve.
- Heat oil on a medium heat in a large pan.
- When oil is hot add chopped onion and cook until just turning brown.
- When brown add garlic, chilies, cinnamon, corriander, cloves and rice. Cook for about 3 mins and keep stirring to coat rice in oil.
- Now add chicken stock and cover pan gently bring to boil.
- When boiling turn off heat, leave pan covered and let rest for about 20 mins. IMPORTANT, it is tempting to have a look but don't, the heat is off it won't burn. The rice is cooking in its steam and this gives more taste. Keep the heat in.
- After about 15 mins you can have a look and give it a stir to fluff up the rice. If you think it needs more water add 1/4 pint boiling water and cover pan for about 5 mins (no heat) then check again.
- Nice soft rice enjoy.
