  5. Crumble up some cheese into the risotto, and stir through till melted. Check seasoning.
  6. Enjoy! Eat by itself or with a little green salad. It's comfort in a bowl! :)

In a large pot or Dutch oven, heat oil. Heat oil in a large frying pan and saute onion until translucent. Add chicken and cook until browned. Add rice and stir until all the grains are coated with oil. Pour in chicken stock, add mushrooms and fold through.
