After twenty minutes wash and add the tin of red kidney beans and cook for a further 20 mins then serve.
Season chicken with salt and pepper. Heat oil in a heavy-bottomed casserole or Dutch oven on high heat. Then fry the chorizo in oil until just beginning to crisp. Pour in the sherry and allow to bubble for a minute, then tip in the tinned tomatoes and the stock. Next time, try using chickpeas or butter beans in place of cannellini beans.
